Owing to 40-100 miles of riding a day I get a free pass for adding pasta and protein shakes, but other than that I'm going to give it a shot too.

I forgot to mention a few expectation setting things with E2L...first expect a LOT of shopping, chopping, and chewing. Second...for the first 6 weeks you should cook as many of the things as possible to break down the fiber. The reprecussions of not doing this can be completely debilitating. trust me. you will have to weed out a few food items to avoid continued 'distress'...these are different for everyone interestingly. chickpeas for one person (ahem) and bell peppers for another. Good luck!
I guess it'll get a lot easier to gap the field and go on solo breakaways, then.

So,if you're eating to live, does this mean you're cutting out alcoholic beverages, sugary, carb-laden deserts and Los Cantaros tortilla chips? After all, there are more nutrient-packed foods for your existence, que no? ;-)
Carol - yep. We haven't been drinking more than say one drink or two drinks a week for the last month or so, and dessert is right out (except maybe a tofutti cutie)
I hadn't thought about the chips and had some last night but was primarily using them to shovel black beans in. Guess I should have just used the fork :-)
The hardest part for me is going to be all the prep time. Time mgmt is the single thing I focus on the most on, and I'm going to have a real tough time giving so much time up to just preparing food. I need pre-fabricated eat-to-live packages or something...
Regardless, we're just transitioning right now - swinging the pendulum away from "frozen dinner with some ice cream is acceptable dinner" to "how 'bout we try something that hasn't been processed?"
Noble endeavor indeed! Let me know how it works out for ya. I, too, am trying to modify my eating habits by, oh my goodness, cooking real food! Like you, my biggest challenge will be finding the time for food preparation and cooking. Buena suerte to you, Theresa, and moi. =)
From one who recently said "bacon - it's what's for dinner" and served up an entire rasher as one evening's meal, it's definitely a 180 degree change. Thanks Krisser for the book loan and the advice.
